Calling all avocado fanatics! Check out these unique twists on guacamole — using lobster, bacon, corn and roasted tomatoes — and get your chips ready to dig in.
Avocados were first discovered in Mexico nearly 10,000 years ago by Spanish conquistadors. Many Americans, however, hadn’t tried one until the 1990s when the U.S. lifted a ban on trading the creamy green fruit from its Southern neighbor (this came in part with the NAFTA agreement).
Since then, traditional Mexican guacamole recipes — which at its base is a simple mixture of avocados and salt mashed with a mortar and pestle — have been tailored to the American taste bud. Case in point: Adding in tomatoes, onions, bacon or even pineapple and peas.
So, appreciate the classic stuff, and then feel free to take things up a notch with a few mix-ins.
- 12 avocados
- 4 tabelspoons chopped or minced garlic
- 1 ½ tablespoon salt
- ¾ cup lime juice
- 3 tablespoons jalapeño, diced
- ¾ cup chopped cilantro
- Mix salt, garlic, lime juice and jalapeños. Let the mixture sit for a couple of minutes so the flavors can really combine.
- Add the avocados and mash. Mix all ingredients together.
- Add cilantro and stir.
Charred Corn and Bacon Guacamole
- Mix bacon and corn into the classic guacamole until combined.
- Classic guacamole
- Meat from 1 lobster, cooked and chilled
- Mix the chilled lobster meat into the guacamole.
Roasted Tomato Guacamole
- Classic guacamole
- 2 cups roasted tomatoes, diced
- Add roasted tomatoes to the classic guacamole and mix.
