We made a dupe recipe for the Starbucks bacon and gruyére egg bites at home

Starbucks bacon and gruyére sous vide egg bites are a high-protein, low carb breakfast favorite. 

But if you’re keeping to a tight social-distancing regimen, you’re in luck. The velvety egg minis packed with cheese and bacon can be replicated at home

In The Know video producer AmiLin McClure has got the perfect dupe for a dozen of the small but mighty breakfast bites. And don’t worry, you won’t need any fancy sous vide equipment to recreate the unique texture of this Starbucks gem.

  • Ingredients: 
  • 10 eggs
  • 1 cup gruyére cheese, shredded
  • 1/2 cup cottage cheese
  • 1/2 tsp salt
  • 4 bacon slices, cooked
  • Black pepper, freshly ground
  • 1/4 cup scallions, chopped
  • Non-stick cooking spray 

AmiLin preheats the oven to 300 degrees Fahrenheit to kick things off. She fills a baking dish with about 1 inch of water and places it on the bottom rack of the oven. 

Starbucks makes their egg bites using a sous vide cooking technique,” AmiLin explains in the clip. “This is the process of vacuum-sealing food in a bag and cooking it to a very precise temperature in a water bath. Since I don’t have the proper equipment for that this alternative replicates that humid environment and will help cook your egg bites evenly.” 

Next, she mixes the eggs, shredded cheese, cottage cheese, scallions, salt and pepper. Then melds the mixture in a blender to make it extra light and frothy. 

AmiLin coats her muffin tin in non-stick cooking spray and fills each mold with the mixture. She chops pieces of turkey bacon and added them to each egg bite. 

Finally, she bakes the dish for 30 minutes. After it cools, this decadent Starbucks dupe is perfect for devouring.
