5 cold dinners that are perfect for hot summer nights

While burgers, corn on the cob and baked potatoes are classic summer foods, they aren’t exactly refreshing. And when it’s hot and humid outside, nothing cools you down like a cold slice of watermelon by the pool. So why not make that into a healthy and filling meal?

Here are five cool dinner ideas for warm summer nights.

1. Watermelon peach salad

The beauty of fruit is that it tastes just as good mixed with other ingredients as it does by itself — and sometimes, even better! This summer salad from What’s Gaby Cooking? combines watermelon, peaches, mint, cucumbers and feta cheese to compliment a larger course or simply cool you down on its own. For optimal flavor, let the salad marinate in the fridge for at least an hour!

2. Green gazpacho

This green goddess gazpacho from Spices in My DNA doesn’t just refresh the palate on a hot day, its color and presentation are practically begging to be featured on your Instagram, too! Greek yogurt and avocado provide the creaminess, so you won’t feel as if you’re just drinking a green juice. Top it off with some slices of cucumber and a yogurt drizzle for presentational perfection.

3. Cold noodle salad with sesame dressing

This Asian-inspired dish from A Mind “Full” Mom is especially great for larger events and outdoor gatherings. The whole-wheat noodles provide a great source of vegetarian fiber and protein, and the sesame flavor appeals to kids and adults alike. Bring it to your next potluck without worrying about reheating!

4. Spinach, hummus and bell pepper wrap

This refreshing meal from Love & Lemons is packed with protein and veggies, and won’t sit heavy in your stomach. The spinach-infused green hummus adds a splash of color and sneaks more nutrition into the meal. These portable wraps make great snacks for traveling, especially on a flight or train ride! Try wrapping them in foil with an ice pack to keep them cool on the go.

5. Smashed chickpea toast

An elevated alternative to tuna or egg salad, this smashed chickpea toast is easy to make and convert into a sandwich if that’s your preference! There’s no actual cooking involved — just mashing and spreading! According to the recipe, you can make it in just five minutes.
