Mother’s Day is all about brunch. What better way to celebrate the person who raised you than through delicious food? And a mimosa, or two, or three. So grab your apron and get cooking! Here are 5 brunch recipes every mom will love.
Everything bagel breakfast pizza
You can’t beat pizza for breakfast, but this everything bagel breakfast pizza comes close! The filmer starts by rolling out their dough and coating it in the bacon grease leftover from their cooked bacon bits (which will come in handy later). Then she sprinkles shredded mozzarella cheese on the base and puts everything bagel seasoning around the edges of the dough. She cracks three eggs on top and bakes the whole thing until the eggs are cooked. Finally she tops it all off with bacon bits and chopped chives for a major upgrade on the classic bacon, egg, and cheese.
This is a simple way to satisfy mom’s sweet tooth. Start by flattening out your slices of bread and then cutting off the crusts. Then spread a mixture of cream cheese and icing sugar on half of the bread slice and place chopped strawberries or fruit of your choice on top of the cream cheese spread. Roll it up and soak it in a mixture of eggs, milk, vanilla, and cinnamon, like you would with French toast. Fry your rolls until crispy and serve!
Croque madame is a breakfast sandwich, but fancy. The filmer starts by making a béchamel sauce out of butter, flour, milk, and Parmesan cheese. Then she places her two slices of bread on her pan and fries them until they’re nice and crispy. Next she spreads the béchamel sauce on the slices of bread, and adds some ham and cheese and puts the bread slides together. She tops her stack with even more cheese and bakes it in the oven. She tops it all off with a fried egg for a surefire Mother’s Day crowd-pleaser.
This North African breakfast is easy, healthy, and oh so flavorful. Start by frying up some onions and garlic, and then add diced tomatoes and optional jalapeño. Next add tomato paste, and some water and spices. The filmer uses a Libyan spice blend, but you could also use a mixture of coriander, cumin, and paprika. Add some chopped cilantro and parsley and let it simmer for a bit before cracking your eggs in the mixture. Once the egg whites are settled, garnish with some mint and you’re ready to serve!
These vibrant pancakes put the “blue” in blueberry pancakes. The filmer first warms up some frozen blueberries and then blends them with an egg, oats, baking powder, cinnamon, salt, and maple syrup to make the batter. Then cook to your (or your mom’s) liking!
