“If you’re going to make any of my recipes, let it be this churro cheesecake,” Valerie says at the beginning of the video, showing the churro cheesecake she’s about to make. Then, Valerie begins to go through her recipe, step by step.
She starts by mixing sugar and cinnamon in a bowl. Then she melts two tablespoons of butter and brushes it on a baking dish. Next, she sprinkles the cinnamon sugar onto the baking dish, warning her viewers to make sure they “sprinkle that cinnamon sugar evenly.”
Valerie places a sheet of dough on top of the cinnamon sugar, then moves on to the next step of the recipe — preparing the cheesecake filling. “Now, for the filling, we’ll need 16 ounces of cream cheese, a can of sweetened condensed milk, 3/4 cup of sour cream, one egg and vanilla,” Valerie explains, mixing the filling ingredients until they are smooth.
Once the filling is ready, Valerie pours it into the baking dish in an even layer. She then places a second sheet of dough on top. She covers the dough in melted butter and cinnamon sugar so that the cheesecake filling is sandwiched between two layers of sugary dough. Then she bakes the pastry at 375 degrees Fahrenheit for 30 minutes.
“Before anyone says anything, I promise it’s not burnt!” Valerie proclaims, as she slides the golden brown dessert out of the oven. Valerie lets the cheesecake cool in the refrigerator for two hours, then slices it, plates it and garnishes it with caramel sauce.
The finished dessert combines the best parts of both cheesecake and churros. While the outside of the dessert is sweet, sugary and a little bit crispy just like a churro, the inside has the smooth, rich texture of cheesecake.
