Eggs are the champion of breakfast foods. Tasty, filling, versatile and a great source of protein, eggs are delicious as their own meal, but they also make an excellent addition to many other dishes — especially sandwiches! Egg sandwiches may be a standard breakfast option, but they’re anything but bland, thanks to the many egg sandwich upgrades featured on TikTok. If you’re looking for a new recipe to start your day with, here are five egg sandwich recipes that are totally “eggs-cellent!” 

1. High-protein scrambled egg sandwich

This creamy egg sandwich is loaded with delicious ingredients. Start by boiling eggs for eight minutes. Next, peel off the shells and separate the egg whites from the egg yolks. Then add the egg yolks to a bowl and combine them with low-fat cream cheese, mustard, salt and pepper. Once the consistency is smooth and creamy, chop up the egg whites and fold them into the yolk mixture. Spread the mixture evenly on a slice of bread. Then add some sriracha and fresh chives. Finally, top the sandwich with another slice of bread and enjoy!

2. Fried egg sandwich with jalapeños and onions

Spice up your mornings with this jalapeño onion fried egg sandwich. Start by spreading butter on two slices of sourdough bread. Then cook them with the buttered side down on a skillet over low heat until golden brown. Meanwhile, crack a few eggs in another skillet and add sliced jalapeños and red onion. Then pour a little water into the skillet before covering it. Season the fried egg patty with pepper before transferring it to a toasted bread slice with mayonnaise. Top with the other toasted slice of bread, slice and serve.

3. “Eggs in a nest” sandwich

Impress your brunch guests with these fancy-looking eggs in a nest sandwich. First, lay out a few slices of bread on a cutting board. Next, use the rim of a shot glass to cut a hole out of the middle of each slice. Then butter both sides of the bread. Toast the slices of bread on a skillet over medium heat. Then place a small piece of butter in the center of the round cutout. Carefully crack an egg into each hole, and season with salt and pepper. Sprinkle some grated cheddar cheese on the eggs before flipping over the bread slices. Finally, plate and garnish with cilantro before serving. 

4. Keto-friendly breadless hard-boiled egg sandwich

Sometimes simple adjustments have revolutionary results. To make this egg sandwich remix, start by boiling an egg. Next, peel off the shell and slice the egg in half lengthwise. Then, spread a layer of mayonnaise on the yolk side of both halves. Place a square of cheddar cheese on one half, followed by a spinach leaf, a turkey slice, a tomato slice and a pickle. Finally, top off the sandwich with the other half of the egg, and secure both sides with a toothpick. 

5. South Asian egg salad sandwich

This ain’t your average egg salad sandwich. First, add cardamom, black cloves, peppercorns, a bay leaf, cumin seeds and a cinnamon stick to a skillet over medium heat. Next, add diced onions, followed by garlic once the onions are translucent. Then add ginger and sliced cherry tomatoes before seasoning with cumin, coriander, garam masala, hot paprika, salt and turmeric. Continue to cook on medium for about 10 minutes. Separate the sauce from the aromatics first listed, and pour the sauce into a bowl with de-shelled, hard-boiled eggs. Mash the eggs and sauce together with your hands. Then add cilantro and chopped Thai chili pepper. Finally, spread the mixture between two slices of bread and enjoy!
