1. Five-ingredient mango pudding
Not only is this five-ingredient mango pudding easy to make, it’s also truly delicious! Start by cutting a mango into cubes. Then place half of the mango into a blender, and blend with a bit of water. Then simmer sugar and cream in a pot until it thickens, and add it to a mixing bowl. To the bowl, add gelatin and the mango puree. Then grab a serving bowl or cup, and add the remaining cubes of mango. Pour the mango mixture on top, and let it rest in the refrigerator for two hours before enjoying.
2. Vegan lemon bars
These vegan lemon bars are the perfect combination of tart and sweet. To make them, combine coconut milk, honey or maple syrup, lemon juice and arrowroot powder. Blend together. Then make a crust by mixing almond flour, coconut oil, maple syrup, vanilla extract and salt. Pour the crust into a parchment-lined baking dish, and top with the lemon mixture. Freeze until the mixture hardens. Then slice into bars!
3. Mixed berry tiramisu
This mixed berry tiramisu is light, creamy and perfectly fluffy. Start by making a simple syrup by boiling sugar and water. Then, in a mixing bowl, combine the berries of your choice. Pour in the hot simple syrup, let the berries sit, then strain and separate the syrup and berries. Next, in a separate bowl, mix heavy cream, icing sugar, mascarpone cheese and vanilla extract, and whip. Finally, in a bowl, layer store-bought lady finger cookies, the berry simple syrup, mascarpone filling and the soaked berries.
4. Banana blondies
These banana blondies are perfect for chocolate-lovers! To make them, combine sugar, butter, eggs, ripe bananas and vanilla extract in a bowl, mixing until the bananas are fully broken apart. Then mix in flour, baking powder and salt. Fold in chopped-up chocolate bar pieces. Then pour the mixture into a baking dish and bake!
5. Easy strawberry shortcake
Need to whip up a fancy dessert quickly? Try this easy-to-make strawberry shortcake that uses boxed cake mix as its base. Start by baking a white cake mix, following the instructions on the box. Next, in a pot, cook strawberries, sugar, cornstarch, lemon juice and vanilla extract until the mixture thickens. Then mix whipped cream, powdered sugar and vanilla extract until peaks form. When the cake is done baking, slice it in half lengthwise, and layer the cake, whipped cream and berry mixture. Top with more whipped cream and fresh strawberries.
