Granita is a Sicilian frozen dessert within the sorbet and gelato family. While granitas may look like fancy European snow cones, the recipe is so simple that it’ll become your go-to frozen treat. If you’re looking for a new dessert to help you cool off, here are five mouthwatering granita recipes to quench your thirst. 

1. Strawberry rhubarb and lime granita

You’ll never look at rhubarb the same again after tasting this strawberry rhubarb and lime granita. Start by cutting rhubarb into thin slices. Next, add the sliced rhubarb, water and sugar to a saucepan over high heat, and cook until the rhubarb becomes mushy. Once cool, transfer the rhubarb mixture to a blender along with strawberries and lime juice. After blending, pour the mixture through a sifter into a separate container. Pour the mix into a tray, and pop it in the freezer. Once frozen, scrape at the granita with a fork. Finally, transfer the shavings to a bowl and garnish with white strawberry slices, mint leaves and citrus gems before serving. 

2. Four-ingredient lime and mint watermelon granita

This lime and mint watermelon granita is not only beautiful and delicious, but it also only requires four ingredients. First, make a mint simple syrup by adding water and sugar to a saucepan, followed by mint and lime zest. Then bring to a boil. Next, add watermelon cubes to a food processor and blend until smooth. Pour the watermelon purée into a bowl, and combine it with lime juice and the mint simple syrup. Pour the mixture into a baking dish and freeze for one hour. Scrape the mix with a fork before freezing it again for 30 minutes. Do this twice more until the consistency becomes fluffy. Then transfer to a serving bowl, and garnish with a lime twist.

3. Four-ingredient vegan and gluten-free cantaloupe granita

You don’t need to adhere to a vegan and gluten-free diet to enjoy this cantaloupe granita. Start by adding chopped cantaloupe to a blender, followed by lime juice, lime zest and maple syrup. Once smooth, toss in some fresh mint and blitz once more. Pour the mixture into a lined baking sheet, and pop it in the freezer. Once frozen, grab a fork and start scraping. Finally, transfer the granita to a serving bowl and garnish with a mint leaf.

Turn your leftover coffee into a delicious granita dessert. First, brew a pot of instant coffee and add sugar. Let cool, then pour the coffee into a baking dish and freeze for 30 minutes. Scrape the granita with a fork. Then freeze again for 30 minutes. Repeat this step every half hour for three hours. Once crystalline and fluffy, transfer the granita to a serving dish.
