When it comes to fried chicken, it needs to have that crunch. Extra crispy fried chicken is what everyone aims for, but can’t always pull off. On this episode of In The Know: Recipe Remix, TikTok-famous chef Shihan Chowdhury (@chilipeppercooks) makes your extra crispy fried chicken dreams come true with his seasoned to perfection recipe that gives you a crunch with every bite.
Ingredients
Chicken marinade
- 1 lb. of bone-in chicken, preferably with the skin on
- 1 cup buttermilk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tbsp paprika
- 1 tsp salt
- 3 Thai chili peppers, diced
- 2 egg whites
Dry batter
- 1 cup potato starch
- ⅓ cup rice flour
- ⅓ cup corn flour
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp salt
Post-seasoning mix
- 1 tbsp cane sugar
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp garlic powder
- 3 tsp paprika
Directions
- First start with the chicken marinade. Combine the buttermilk, garlic powder, onion powder, chili powder, paprika, salt, and Thai chili peppers in a bowl. Once it’s mixed, add the egg whites to the marinade.
- Place the chicken in the marinade and let it sit in the refrigerator for 12 – 24 hours.
- To make the dry batter, combine the potato starch, rice flour, corn flour, onion powder, garlic powder, and salt in a bowl.
- Once it’s been 12+ hours, remove your chicken from the fridge.
- Coat your marinated chicken in the dry batter by removing it from the marinade bowl and gently tossing it in the dry batter bowl. Shihan wears gloves to prevent contamination.
- Prep your post-seasoning mix by combining the cane sugar, onion powder, salt, garlic powder, and paprika in a small bowl, and set it aside.
- Slowly submerge your chicken in oil (350 degrees Fahrenheit) and fry it for 10-12 minutes. Once the chicken is light brown, remove it.
- Increase the heat so the temperature of the oil gets to 375 degrees Fahrenheit, and put the chicken back in for another 3-5 minutes.
- As soon as you remove the chicken, add the post-seasoning to it so the flavor can melt into the chicken skin. Do this to both sides of your chicken pieces. Now all that’s left to do is take a bite and listen to the satisfying crunch!
