When it comes to finger foods, French fries are as beloved as it gets. But if you’re looking to upgrade your fries with some powerful flavors and seasonings, TikTok-famous chef Shihan Chowdhury (@chilipeppercooks) has you covered. On this episode of In The Know: Recipe Remix, Shihan shares his recipe for seasoned fries with green chutney sauce, which features crispy fries served with a tangy dip that’s layered with complex flavors. Time to put that spice rack to use!
Ingredients
- 2 russet potatoes
Fry Seasoning Mix
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 3 tsp paprika
- 1 tsp chili flakes
- 1 tbsp cane sugar
Green Chutney Sauce
- 1 cup whole cilantro
- 20 mint leaves
- 1 tbsp lime juice
- 1 tbsp sugar
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 cup yogurt
- 2 garlic cloves
- 1/2 tsp salt, to taste
- 1 Thai chili pepper
Directions
- Make the green chutney sauce. Combine all the ingredients in a blender and blend until smooth. Add salt to taste.
- Make the spice blend by combining all the fry seasoning mix ingredients in a bowl.
- Cut up the potatoes into French fry sizes, then rest the potatoes in cold water for 30 minutes.
- Completely dry off the potatoes using a cloth or a paper towel, and then deep fry them at 350 degrees Fahrenheit for 10-15 minutes or until golden brown. Note: If you don’t have a deep fryer, use a deep pan filled with canola oil.
- Once out of the fryer, immediately season the fries with the seasoning mix. Dig in!
