Make this easy and sophisticated golden peach slushy

No drink says “springtime” quite like sparkling rosé.

The season of renewal calls for a lighter and brighter palette. With most people at home due to the pandemic, now is a great time to spruce up the old cocktail skills. This golden peach slushy is super simple but elevated enough to impress guests — or, you know, your friends over Zoom.

This bubbly, peachy beverage is the perfect easy-breezy, warm-weather drink to enjoy while longingly gazing out the window, longingly gazing on the balcony or longingly gazing in the garden.

Soothe your social distancing soul with In The Know’s upbeat cocktail of the week.

  • 1 pint peach sorbet
  • 1 bottle sparkling rosé or other sparkling variety
  • Fresh thyme for garnish
  • Gold leaf for garnish
  • Peach slices for garnish

First, place a small scoop of sorbet into a champagne glass. Next, pour sparkling rosé over the ice cream scoop until the glass is full. Finally, garnish with peach slices, thyme and the gold leaf.

The thyme’s herbaceous notes, rosé’s floral aroma and the peach’s subtle sweetness is a timely nod to Mother Nature’s offerings. Spring is a time of regrowth, renewal and rebirth. As flowers bloom we’re reminded of the cycle of life each year, according to Psych Central. We tend to feel less sluggish, posture towards optimism and begin to invite life’s positive changes. And boy, the times they are a-changing!

Embrace the chaotic good and pour one out for the homies you so sorely miss with this golden peach slushy!
