Then sauté them in a pan with onions, garlic, paprika, garlic powder and salt. When the veggies are almost cooked through, mix in barbecue sauce. Serve on your favorite sandwich bread.

This cheese-free, vegan mac ‘n’ cheese is so cozy! Start by cooking noodles. Then make a sauce by blending butter beans, vegan butter, nutritional yeast, vegan parmesan, vegan cheddar, salt, pepper, paprika, lemon juice, vegetable stock and non-dairy milk. Add the sauce to the noodles and serve!

3. 20-minute vegan spicy miso ramen

If you like food with a bit of a kick, try this 20-minute spicy vegan miso ramen! Start by sautéing ginger, onions and garlic in a pan until fragrant. Then add mushrooms, chili garlic sauce, soy milk and water. Bring the mixture to a boil. Then add miso paste and sugar. Stir the mixture, turn off the heat, and add coconut milk. Strain the broth and pour over cooked ramen. Then garnish with mushrooms and green onions.

4. 20-minute vegan air fryer stuffed sweet potatoes

These 20-minute air fryer stuffed sweet potatoes are easy to make and so delicious! Just rub sweet potatoes in olive oil, and cook them in your air fryer for 20 minutes at 400 degrees Fahrenheit. Meanwhile, sauté onions, beans, canned corn and bell peppers. Mix in salsa when the veggies are cooked. Then slice open the cooked sweet potatoes, and top them with the veggie mixture, avocado, cilantro and green onions.

5. 20-minute vegan pumpkin risotto

This vegan pumpkin risotto is so decadent! To make it, sauté onions and garlic. Then move them to the side and add Arborio rice. Toast the rice and season with spices. Mix everything together. Then add pumpkin puree and vegetable broth. Stir the rice. Then cover it, and let it cook until it’s fluffy and soft. Mix in a bit of coconut milk, parsley, lemon juice and vegan parmesan, and enjoy!
