4. 20-minute vegan air fryer stuffed sweet potatoes
These 20-minute air fryer stuffed sweet potatoes are easy to make and so delicious! Just rub sweet potatoes in olive oil, and cook them in your air fryer for 20 minutes at 400 degrees Fahrenheit. Meanwhile, sauté onions, beans, canned corn and bell peppers. Mix in salsa when the veggies are cooked. Then slice open the cooked sweet potatoes, and top them with the veggie mixture, avocado, cilantro and green onions.
5. 20-minute vegan pumpkin risotto
This vegan pumpkin risotto is so decadent! To make it, sauté onions and garlic. Then move them to the side and add Arborio rice. Toast the rice and season with spices. Mix everything together. Then add pumpkin puree and vegetable broth. Stir the rice. Then cover it, and let it cook until it’s fluffy and soft. Mix in a bit of coconut milk, parsley, lemon juice and vegan parmesan, and enjoy!
