Summer rolls are the perfect light yet filling dish for a hot summer day. Consisting of fresh ingredients like vegetables, tofu or meat wrapped in rice paper, summer rolls are a finger-food favorite that can be enjoyed as a delicious snack or party appetizer. Now, summer rolls are taking over TikTok with many tasty recipes you can whip up in a pinch. If you’re looking for something light and fresh to munch on, here are five summer roll recipes that are beyond irresistible. 

1. Vegan fiddlehead summer rolls

If you like your meal prep with a side of adventure, these vegan fiddlehead summer rolls are right up your alley. After foraging for the ingredients, TikToker @chaoticforager begins by soaking glass noodles in a bowl of water. Next, she lightly fries ostrich fern fiddleheads in an oiled skillet with salt. Then she dips a sheet of rice paper in water and lays it out on a flat surface. Finally, she places layers of basil and sochan (a leafy green similar to lettuce) on one side of the rice paper before tightly wrapping it up and adding magnolia sepals (the base part of magnolia flowers that taste similar to ginger), the soaked glass noodles and the fried ostrich fern fiddleheads as she continues to fold. Once wrapped, she tops off the summer rolls with peanut sauce.

2. “Hot Girl Summer” rolls

This recipe features a mélange of fresh herbs and vegetables wrapped into one summer roll. Start by dipping a rice paper sheet in water and laying it out flat on a plate. Next, place cucumbers sliced lengthwise in the middle of the rice paper. Then add a layer of mint and basil, followed by carrot sticks, avocado slices, cilantro and butter lettuce. Tightly wrap up the ingredients and serve with peanut sauce.  

3. Vegan rainbow summer rolls

Taste the rainbow with this vegan summer roll. First, dip a sheet of rice paper in water and lay it out on a flat surface. Next, arrange cherry tomatoes, butternut squash, bell peppers, mango, lemon zest, cucumbers, avocados, arugula, red onions and puréed beet tofu in a rainbow pattern on the rice paper. Then fold up the technicolor ingredients before topping off the summer roll with a habanero drizzle and sesame seeds.

Who says delicious and simple have to be mutually exclusive? First, dip a sheet of rice paper in water and lay it out on a flat surface. Next, spread on a layer of peanut sauce, followed by cooked rice, cooked shredded chicken, cucumber sticks and carrot sticks, before topping with fresh mint and sriracha. Finally, wrap up the ingredients, slice the summer roll in half and enjoy! 

5. Vegan crispy summer rolls

These crispy summer rolls pack a wonderful crunch. First, gently dip a sheet of rice paper in water. Then lay it flat on a cutting board. Next, place carrots, bell peppers, cucumbers and smoked tofu in the center of the rice paper. Then wrap up the ingredients before air frying the rolls at 400 degrees Fahrenheit for five minutes. Serve with a homemade peanut sauce made from peanut butter, soy sauce, sesame oil and agave seasoned with salt, ginger powder, garlic powder and chili flakes.
