Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder 
  • ½ tbsp baking soda 
  • ½ tsp salt 
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • 1 tbsp coconut oil

Directions

  1. Mash two bananas in a mixing bowl using a fork, then add the all-purpose flour, sugar, baking powder, baking soda, salt, cinnamon, vanilla extract, and olive oil and thoroughly combine.
  1. Cut two bananas into half-inch slices.
  1. Add the butter to a heated pan and fry the banana slices until caramelized, then set aside. 
  1. Add the coconut oil to the pan and transfer approximately ⅓ cup of batter per pancake to the pan, then cook and set aside.
  2. Stack the pancakes and top them with butter and maple syrup, then serve with the caramelized banana slices.
