This one pan Greek chicken with potatoes is the perfect weeknight dinner

Quick, simple, and delicious, one-pan meals make a perfect weekday dinner, and this Greek chicken and potatoes dish is no exception! Featuring lemony roasted chicken and tender potatoes, all amped up with Mediterranean herbs and seasonings, this one-pan chicken recipe is like a one-way ticket to Greece! If you’re looking for a flavorful meal that’s easy to whip up, this Greek-style chicken dish will be a welcome addition to your recipe rotation. 


  • Whole chicken
  • Olive oil 
  • Salt and pepper 
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder 
  • 4 potatoes, cut into wedges
  • 1 medium onion, cut into wedges
  • 6 garlic cloves 
  • Fresh rosemary 
  • Fresh thyme 
  • 2 lemons 
  • ½ cup chicken stock 



  1. Place the chicken on a baking sheet, then season both sides with olive oil, salt and pepper. 
  1. Place the seasoned chicken in a ceramic baking dish
  1. Make a seasoning blend by combining the dried oregano, garlic powder and onion powder, then set aside. 
  1. Add the potatoes to the baking dish, so that they surround the chicken. 
  1. Add the onion to the baking dish, then drizzle olive oil over the chicken, potatoes and onion.
  1. Add the garlic cloves to the baking dish so they are surrounding the chicken.
  1. Place a few sprigs of fresh rosemary and fresh thyme throughout the baking dish.
  1. Sprinkle the seasoning mix over the ingredients, then add more salt and pepper. 
  1. Squeeze the juice from one lemon over the ingredients, then place the wedges in the baking dish. For the second lemon, squeeze the juice inside of the chicken, then place the wedges inside as well. 
  1. Tie the chicken thighs together using butcher’s twine, then pour in the chicken stock. 
  1. Bake at 400 degrees Fahrenheit for 90 minutes. Enjoy!
