This surefire crowd-pleaser features a menagerie of fresh vegetables and orzo pasta mixed with a flavorful vinaigrette dressing. Not only is this orzo pasta salad delicious, but it’s also super easy to throw together. If you’re looking for a tasty side dish to add to your party’s spread, try this orzo and vegetable pasta salad!
Ingredients
Salad Dressing
- ¼ cup red wine vinegar
- ¼ cup lemon juice
- 1 tsp dijon mustard
- 2 garlic cloves, minced
- 2 tsp oregano
- 1 tsp salt
- ½ tsp black pepper
- ½ cup olive oil
Pasta Salad
- ⅓ cup red onion, diced
- 1 red bell pepper, chopped
- 15 oz. can chickpeas
- ⅓ cup kalamata olives, sliced
- 2 cups cucumber, chopped
- 1 pint cherry tomatoes, halved
- ⅓ cups cooked orzo pasta
- 2 tbsp fresh or dried oregano
- ½ cup fresh parsley, finely chopped
- 8 oz. feta cheese
- 1 ripe avocado
- Fresh mint, chopped

Directions
- Make the dressing by whisking together red wine vinegar, lemon juice, dijon mustard, garlic, dried oregano, salt, and black pepper. Drizzle in olive oil while whisking the mixture to emulsify.
- Add diced red onions and half of the vinaigrette dressing to a large bowl.
- Add chopped bell peppers along with chickpeas, kalamata olives, cucumbers, and cherry tomatoes to the bowl with the dressing and red onions.
- Toss together with tongs, then add the mixture to a bowl of cooked orzo pasta.
- Add parsley and feta cheese, then mix using the tongs.
- Garnish with mint and an avocado “flower” before serving.
