5 delicious vegan dishes that are perfect for summer picnics

Whether you’re kicking it at the beach or relaxing in the park, having a picnic is the perfect way to spend a summer afternoon. But for vegans, finding tasty, packable recipes can be a bit of a challenge. Luckily, TikTok is full of delicious vegan recipes that are perfect for picnicking. Here are five amazing vegan dishes that you should definitely toss in your picnic basket this summer.

1. Vegan ‘BLT’ sandwich

Vegans shouldn’t have to miss out on delicious picnic sandwiches! This vegan take on the BLT features tempeh marinated in soy sauce and maple syrup in lieu of the bacon. Throw on some vegan mayo, mustard and, of course, some lettuce and tomato, and you’ve got a refreshing sando that’ll make your non-vegan friends jealous.

2. Vegan chickpea salad

Chickpeas are the star of this nutritious salad, but tahini, celery, fresh herbs and pecans help round out the filling dish. TikToker @emilycahillhealth recommends serving the salad on its own or in a wrap. Either way, this salad will be a popular dish at any picnic potluck.

3. Vegan chamomile sugar cookies

These classy cookies are perfect for picnics because they won’t melt as they patiently wait in your bag or cooler! These vegan sugar cookies feature vegan butter and fresh chamomile tea leaves for a flavorful daytime dessert that’s sure to impress your fellow park-goers.

4. Vegan watermelon ‘tuna tartare’

TikToker @ligier claims this vegan watermelon dish has the same texture and flavor as tuna. The watermelon needs to marinate for six hours before heading to the oven for another hour, so this recipe definitely takes a decent amount of time. But if you’re willing to put in the work, this vegan dish is the perfect conversation-starter at a picnic.

5. Vegan crunchy peanut jar salad

This crunchy salad is designed to be stored and transported in a jar. When you’re ready to eat it, just pour it out onto a plate. Featuring quinoa, peanuts, edamame and a delicious homemade dressing, this salad is filling enough to be a complete meal. Plus, who can resist the aesthetic of those beautiful layers?
