5 vegan TikTok recipes for ‘Veganuary’

If you’ve been thinking about trying a vegan diet, January is a great time to start! The first month of the year also happens to be “Veganuary,” an annual challenge that encourages people to try out a vegan diet — for at least a month. If you’re going vegan for January but are intimidated by vegan cooking, TikTok chefs have you covered with a wide variety of mouthwatering vegan recipes. Here are five delicious vegan recipes in honor of “Veganuary.”

1. Vegan creamy red pepper pasta

This vegan creamy red pepper pasta makes a great hearty dinner. To make it, chop up red peppers, onions, garlic and cherry tomatoes. Drizzle with olive oil and balsamic glaze, and sprinkle on a bit of salt and pepper. Then roast the veggies, and blend them up with some tofu and nutritional yeast to make a sauce. Season with more salt and pepper. Then pour the sauce over cooked spaghetti and enjoy!

This vegan cauliflower and chickpea wrap makes the perfect weekday lunch. Start by seasoning cauliflower, chickpeas and onions with a mix of spices and baking them in the oven. Then make a vegan Caesar salad dressing out of tahini, lemon juice, garlic, salt and pepper. Toss the Caesar dressing with some lettuce. Then spread hummus on a piece of warm pita bread, and add the lettuce and roasted veggies.

3. Vegan berry ‘cheesecake

This vegan berry cheesecake looks beautiful and tastes even better! Make a crust out of cookies and vegan butter. Then make a sauce using blueberries, blackberries, lemon juice, sugar and water. Next, make your cheesecake mixture out of vegan cream cheese, vanilla extract, soy cream, icing sugar and cornstarch. Mix the berry sauce into half of the cheesecake mixture. Then pour it onto your cheesecake crust. Top with the other half of the cheesecake mixture, and refrigerate overnight. Finally, top with more berry sauce, fresh berries and enjoy!

4. Vegan 10-minute breakfast burrito

This easy-to-make vegan breakfast burrito is the perfect introduction to vegan cooking! Just sauté some chopped potatoes, onions, red peppers, mushrooms and tofu in a pan with a mix of spices and nutritional yeast. Then add the sautéed veggies to a tortilla with some fresh spinach, cherry tomatoes and hot sauce. Fold up your burrito and serve. 

5. Vegan ‘chicken wings

If you’re struggling with the idea of giving up meat, give these vegan “chicken wings” a try! To make them, blend tofu, wheat gluten, chickpea flour, miso paste, salt and water. Form the mixture into chicken wing shapes, and cook them in vegetable stock for 15 minutes. Then make a marinade out of soy sauce, oil, the sweetener of your choice, finely minced garlic and chili paste. Coat the wings in the marinade. Then fry them in oil until brown. Serve with the vegan sauce of your choice.
